Kitchen tip

The biggest shortcut is to buy pre-sliced neck steaks. Neck is more reliable for baking in beer sauce than a lean chop because it dries out less. To make preparation even quicker, slice the onion and season the meat the evening before, refrigerate, and the next day just pour over the beer and stock and bake.

Variants and alternatives

For a more pronounced gravy, add 1 teaspoon of tomato paste to the onion. Instead of dark beer you can use amber beer; the sauce will be milder and less sweet. If you prefer a thicker sauce, after roasting dissolve 1 teaspoon of plain flour in 2 tablespoons of cold water, stir into the gravy and put the roasting pan back in the oven for 5 minutes.
