The quickest shortcut is to use very ripe mango, which blends completely smooth and won’t need extra sweetening. If your mango is firmer, cut it into smaller pieces and blend it with 1–2 tablespoons of orange juice. You can lightly toast the coconut in a dry pan, but for a quick version you can leave it untoasted.

Variants and alternatives
For a more filling breakfast, add 2 tablespoons of fine rolled oats or granola between the layers. Use mashed banana instead of honey—the cup will be sweeter without added sugar. For a lactose-free version, use lactose-free yogurt or thick coconut yogurt. A few mint leaves also go well with lime—chop them finely and stir into the mango purée.
