The biggest shortcut is to use potatoes and carrots cooked the day before. Cold potatoes are easier to cut, the salad won’t fall apart and the dressing soaks in evenly. If you’re in a hurry, buy a jarred mix of peas and carrots, drain it well and just cut the carrots into smaller pieces.

Variants and alternatives
An even lighter version: skip the mayonnaise and use a total of 240 g of thick plain yogurt. Then adjust the flavor with an extra teaspoon of mustard. Without the deli meat: replace the ham salami with 2 hard‑boiled eggs diced. For a richer taste: replace part of the yogurt with sour cream and add a pinch of Worcestershire sauce.
