Cauliflower “wings” in the airfryer are exactly the snack that tastes like something “sinfully good,” but it’s actually just cauliflower in a crispy spicy coating. In the airfryer they turn golden without frying and without an oil bath. The inside stays juicy and tender, the outside crunches and the heat gives you the right “buffalo” vibe. Great for movie nights, party platters or as a quick dinner when you want something crunchy but don’t want chips.

1Step 1Break the cauliflower into smaller florets – ideally bite-sized (one to two bites). Wash them and, most importantly, dry them well. If the cauliflower is wet, the batter will run off and the coating won’t stick.
2Step 2Prepare the batter in a bowl: mix the flour, milk, salt, pepper, smoked paprika, garlic powder, chili and (if you want) baking powder. It should form a thicker batter similar to tempura – one that coats a floret but doesn’t run off completely. If it’s too thin, add a tablespoon of flour. If it’s too thick, add a little milk.
3Step 3Put panko breadcrumbs on a plate. Now bread the florets: dip each floret into the batter, let it drip briefly, then coat it in panko. Press the panko lightly so it sticks. This is the trick that makes the “wings” truly crispy, not just coated in batter.
4Step 4Preheat the air fryer to 200 °C. Arrange the florets in the basket in a single layer with spaces between them. Don’t overcrowd the basket – if you pile them up they’ll steam instead of roast. Lightly spray the florets with oil (just a little) so the panko browns nicely.
5Step 5Bake 16–18 minutes at 200 °C. Halfway through, pull out the basket and turn or shake the florets so they brown evenly. Toward the end watch them closely – every air fryer cooks a bit differently and the difference between “golden” and “dark” is a few minutes.
6Step 6If you want a “buffalo” finish, prepare a quick sauce: melt butter in a saucepan or microwave, stir in hot sauce and squeeze in lemon. Put the baked cauliflower wings into a bowl, pour over the sauce and toss quickly so the coating is covered. If you want to preserve maximum crispness, use only a light coating or serve the sauce on the side as a dip.
7Step 7Serve immediately while crispy. Pairs great with yogurt dip, garlic dip, or just lemon. For a party table, you can place them next to fries or other airfryer snacks.

Kitchen tip

Three things make them crispy: dry cauliflower, panko, and a non-overcrowded basket. If you want crunch even after the buffalo sauce, bake the wings first, then lightly toss with sauce and return them to the airfryer for 1–2 minutes. The coating will “set” and won’t go soggy right away.
