With lamb, the biggest difference is how long you leave it in the pan. If you overcook it you’ll end up with dry meat, which will confirm everyone’s prejudice that “lamb isn’t good.” Try the opposite – cook it for a shorter time, cut into one chop and if it seems too raw, put it back for a moment. After two or three tries you’ll have the timing down.

Garlic with yogurt: instead of butter at the end, serve the chops with a yogurt dip (plain yogurt, garlic, salt, lemon) – great when you want to lighten the dish.
