The most common problem with puff pastry strudel is a soggy bottom. The solution is simple: breadcrumbs or sponge biscuits under the filling + don’t overfill with apples. If the apples are extra juicy, feel free to squeeze them lightly after grating. The strudel will still be juicy, but the pastry will stay crispy.

Variants and alternatives
Pear strudel: replace some apples with pears – it will be sweeter and more aromatic. Gingerbread strudel: add a pinch of gingerbread spice to the filling – ideal for autumn and winter. Without raisins: omit the raisins and add more nuts or sliced almonds. Extra crispy: bake at 200 °C for the last 3–4 minutes (watch carefully to avoid burning).
