If you want the cherries to sink less, lightly toss them in a tablespoon of flour before placing them on the batter. It’s not necessary but helps with very juicy cherries. And always: let frozen fruit drain, otherwise parts of the cake will be soggy.

Variants and alternatives
Sour cherry version: use sour cherries instead of sweet ones – they’ll be tangier and the cake will taste even more “summery.” With streusel: top with a quick crumb (flour + sugar + butter) – the cake becomes more like a tart. Lemon: add grated lemon zest to the batter – it brightens the flavor. Other fruits: blueberries, currants, strawberries, and apricots also work. You can keep the base the same.
