Sheet cherry cake (quick classic)

Sheet cherry cake is one of the fastest sweet classics around. In fifteen minutes you’ll have the batter ready, pour it onto a sheet, sprinkle the cherries, and the oven will do the rest. It’s airy, tender, and juicy just like you remember from childhood. Best of all – it works with frozen cherries too, so you can make it any time, not just in season. Perfect with coffee, for the weekend, for kids’ snacks, or as a quick treat when guests arrive “at the last minute.”

1Step 1Preheat the oven to 170 °C (top/bottom heat). Line the baking tray with parchment paper or grease and flour it — parchment is quickest, especially for cutting.
2Step 2Put the eggs, sugar and vanilla sugar into a bowl and whisk for a few minutes until the mixture lightens. Pour in the milk and oil and add the yogurt or sour cream. Mix briefly — the yogurt will keep the cake moist even the next day.
3Step 3In another bowl, mix the flour, baking powder and a pinch of salt. Gradually add the dry ingredients to the wet and whisk into a smooth, lump-free batter. You don’t need to beat it for long — just combine. Overmixing can make the batter unnecessarily dense.
4Step 4Pour the batter onto the tray and spread it into an even layer with a spatula. Distribute the cherries evenly over the surface. If using frozen, thaw and drain them well first — wet cherries would leave “wet spots” on the cake.
5Step 5Put the tray in the oven and bake for 20–25 minutes. Near the end, do the skewer test — poke into the center of the cake (not into a cherry). If the skewer comes out dry, it’s done. Let the cake cool on the tray, then cut into squares.
6Step 6Before serving, you can lightly dust it with powdered sugar. Best warm or completely cooled, with coffee or cocoa.

Kitchen tip

If you want the cherries to sink less, lightly toss them in a tablespoon of flour before placing them on the batter. It’s not necessary but helps with very juicy cherries. And always: let frozen fruit drain, otherwise parts of the cake will be soggy.

Sour cherry version: use sour cherries instead of sweet ones – they’ll be tangier and the cake will taste even more “summery.” With streusel: top with a quick crumb (flour + sugar + butter) – the cake becomes more like a tart. Lemon: add grated lemon zest to the batter – it brightens the flavor. Other fruits: blueberries, currants, strawberries, and apricots also work. You can keep the base the same.
