If you want the muffins truly “sugar-free,” watch the ingredients of your sweetener and vanilla sugar – ideally use vanilla extract and a low-cal sweetener like erythritol or xylitol. Adjust sweetness based on the bananas: when very ripe (speckled), you often don’t need to add much at all.
