The biggest shortcut is to prepare the bulgur while the carrots roast. Just pour hot kettle broth over it and let it sit covered; it doesn’t need to be cooked in a pot. You can also mix the yogurt dressing a day ahead and refrigerate.

Variants and alternatives
For a heartier version, add 100 g of crumbled feta or Balkan cheese to the finished salad. Use mint or cilantro instead of parsley for a fresher salad. You can add drained chickpeas to the tray with the carrots; they will roast slightly and make the dish more filling. If you don't have cumin, use sweet paprika or a pinch of dried thyme.
