If someone in the family is worried about bones, have the carp portioned into fillets at the counter and ask for as many intermuscular bones removed as possible. At home you’ll only need to check a few pieces and frying becomes much easier—especially when cooking for children or someone who doesn’t usually eat fish.

Part-fried + finished in the oven: Briefly sear the carp portions on both sides in a pan, transfer to a baking sheet lined with parchment, and finish in the oven at 180 °C for about 10 minutes – the coating stays crispy and the meat absorbs less fat.
