The biggest shortcut is to choose equally thick boneless chops, ideally about 1.5–2 cm. You can mix the salt, pepper and caraway in a small bowl and chop the garlic and onion in the morning. Don’t keep the meat on high heat the whole time; a quick sear gives color and short braising keeps it juicier.

Variants and alternatives
For a stronger sauce add 1 tablespoon Worcestershire with the water. Instead of butter, stir in 2 tablespoons double cream at the end and gently heat the sauce. For more sauce, add 250 ml stock and let it reduce for 2 minutes after removing the meat. Without onion the flavor will be pure garlic; the method stays the same, just cook the garlic very briefly.
