Spicy cheese dip for fries (cheddar-style, but with everyday ingredients)

This spicy cheese dip is exactly that “cinema cheddar” you want to dunk fries or nachos into… just without buying a special cheddar sauce from the store. You make it from common ingredients available everywhere: milk, butter, flour, cheese (edam/gouda/emmental) and a pinch of seasoning. The trick is to make a quick smooth béchamel base, then gradually melt the cheese into it – the dip is creamy, stretchy and nicely smooth. Add chili and smoked paprika and you’ll get a flavor that really resembles a fast-food “cheddar-style” dip.

When the dip starts to thicken after a while (which is normal), simply warm it again over low heat and add 1–2 tablespoons of milk. Never cook it on high – the cheese can seize and become grainy. And if you want a “super cheddar” taste without cheddar, try a mix of gouda + edam and smoked paprika.

Variants and alternatives

Mild version for kids: omit chili and use only smoked paprika (or skip that too). Extra spicy: add a few drops of hot sauce and a pinch of cayenne. With jalapeños: stir in chopped canned jalapeños – the dip will be even more “movie-night.” No flour: you can make it with just cream + cheese, but it will be less stable. This roux-based version holds best and is the smoothest.
