What we’ve prepared for you today is a slightly different “travel bread” – straight from the world of fantasy and Middle-earth. You know lembas from The Lord of the Rings as a magical cake that sustains on a long march – we won’t use any magic here, but the principle remains the same: simple, denser cakes made from flour, rolled oats and yogurt that won’t crumble in a backpack and can be eaten by hand. No long proofing, no alchemy – just make the dough, roll it out, cut and bake. Great as a snack for a hike, school, work or with a bowl of soup at home on the couch.

If you want to feel like you’re traveling through Middle-earth, wrap the individual flatbreads separately in parchment or cloth napkins and toss them in your backpack instead of store-bought bread. They’re great plain and dry, but even better spread with butter, a cheese spread, or hummus. Thanks to the oats and yogurt they’re more filling than a regular roll, so one or two flatbreads can easily replace a whole snack.

Variants and alternatives

A little extra “magic”: add a pinch of ground cardamom or nutmeg to the dough. It won’t make it a sweet pastry, just a subtle, almost unidentifiable aroma that pushes the lembas more into the “elf” realm.
