The biggest shortcut is to cook the potatoes the day before and keep them in the fridge. The next day just smash them on the tray and bake. Cold potatoes hold together better and often become even crispier after baking. Don’t add the garlic at the start of baking, it can turn bitter at high temperature.

Variants and alternatives
With butter: after baking toss the hot potatoes with 1 tablespoon melted butter and chives.Spicy version: add 1/2 teaspoon smoked paprika or a pinch of chili to the oil.With yogurt dip: serve with plain yogurt, salt, lemon juice and a little chives.Without garlic: omit the garlic and use only oil, salt, pepper and fresh herbs.
