The biggest shortcut is to use a rice cooker or cook the rice the night before. For shaping, briefly reheat it in the microwave so it becomes soft and sticky again. If you don't have an onigiri mold, plastic wrap is enough: the rice won't stick to your hands and the balls can be pressed well. Keep nori separate, it will soften quickly in the box.

Spicy onigiri: stir 1 teaspoon sriracha or a pinch of chili into the tuna filling.Milder version for kids: omit the sesame oil and replace soy sauce with a pinch of salt.No tuna: fill onigiri with mashed avocado with a little lemon juice and salt, but eat them as soon as possible.Crispier box: pack nori separately and add it only when eating so it stays crisp.
