The biggest shortcut is to use pre-rolled puff pastry and baby spinach, which only needs a quick wilt in the pan. If you use frozen spinach, thaw it first and squeeze it very thoroughly, otherwise the filling will wet the pastry and the pinwheels won’t be crispy.

Variants and alternatives
Use flat-leaf parsley instead of dill or a little mint for a fresher Greek flavor. Add 2 tablespoons chopped black olives to the filling, but do not add salt—feta is salty enough. For a creamier filling, mix the feta with 2 tablespoons ricotta or fromage frais. You can prepare the pinwheels on the tray ahead of time, cover and keep in the fridge for up to 4 hours before baking.
