Sour beans – a simple Czech classic with egg

Sour beans are exactly the kind of dish many people remember from canteens — but few make at home, which is a shame. It’s actually simple, quick and tasty. Use cooked white beans (canned are fine), make a proper onion base, season with vinegar, sugar and caraway, and serve with a boiled egg and a slice of bread. Done. No fuss, few ingredients, yet cheap, filling and perfect for winter or “when you’re hungry and don’t want to stand at the stove for an hour and a half.”

Beans in vinegar work great as meal prep – cook a larger batch, store in a container and you have lunch ready for the next day. Flavors meld even more in the fridge overnight, so it often tastes better than freshly made. When reheating, add a splash of water if the sauce has thickened too much.
