Want truly “bistro-crispy” fries? Do them in two stages: first bake 12 minutes at 180 °C (just to soften), then raise to 200–205 °C and finish for another 6–10 minutes until golden. The second stage is what creates the crispiness. And remember: never overfill the basket.

Variants and alternatives
Seasoned fries: add smoked paprika, a little chili and a pinch of dried oregano — you’ll get closer to fast-food “seasoned fries.” Sweet potato fries: use sweet potatoes instead of potatoes. Expect they’ll be naturally softer, and it’s worth lightly coating them in starch before baking. Extra crispy: after drying, dust the fries lightly with 1–2 tablespoons of starch, toss, then add oil. The coating will be crispier. Oil-free: it’s possible, but expect less of a bistro-style crisp and a drier result. Even a few drops of oil make a big difference.
