Ingredients: 800 g hovězí přední nebo kližka; 2200 ml studená voda; 1 ks cibule; 1 ks mrkev; 100 g celer; 1 ks petržel; 2 ks bobkový list; 4 ks nové koření; 8 ks celý černý pepř; 2 lžičky sůl; 4 pcs eggs; 50 g máslo; 50 g hladká mouka; 600 ml hovězí vývar z vaření masa; 250 ml smetana ke šlehání 30%; 30 g čerstvý kopr; 1 lžíce ocet nebo citronová šťáva; 1 lžička cukr; 600 g houskový knedlík k podávání

1Step 1Place the beef in a large pot, cover with cold water and slowly bring to a boil. Skim off the foam, add the onion, carrot, celery, parsley, bay leaf, allspice, whole pepper and salt.
2Step 2Simmer the meat gently for 1.5 to 2 hours until tender. Then remove it, let it rest briefly and strain the broth through a sieve. Measure 600 ml of broth for the sauce.
3Step 3Place the eggs in boiling water and cook for 9 to 10 minutes hard‑boiled. Cool them in cold water, peel and halve.
4Step 4In a saucepan melt the butter, sprinkle in the plain flour and, stirring constantly, make a light roux. Cook for 2 to 3 minutes so the flour loses its raw taste.
5Step 5Gradually whisk in the warm beef broth. Stir the sauce smooth and simmer over low heat for about 15 minutes so it thickens and the flour is cooked through.
6Step 6Pour in the cream and simmer briefly for another 3 to 5 minutes. If the sauce is too thick, thin it with a little more broth.
7Step 7Stir in the chopped dill, season with vinegar or lemon juice and sugar. Add salt to taste. After adding the dill do not cook the sauce for long.
8Step 8Slice the beef against the grain. Serve it with the dill sauce, hard‑boiled egg and warmed bread dumpling.

Kitchen tip

The biggest shortcut is to cook the beef and stock a day ahead. The next day the dill sauce is prepared faster and you can adjust the flavor by gradually adding vinegar and sugar.
