The biggest shortcut is to bake the sponge a day ahead. Once cooled, wrap it in foil and keep in the fridge — it’s easier to slice the next day and you just fill the cake. If you want straighter layers, bake the batter in two identical tins so you don’t have to cut the sponge.

Variants and alternatives
Use strawberries or blueberries instead of raspberries, but cut larger strawberries into smaller pieces. For a smoother cream replace half the quark with Neufchâtel or cream cheese. You can use weak coffee instead of hot water in the batter to enhance the chocolate flavor, though the cake won’t taste strongly of coffee. For a children’s party omit the coffee and decorate the top only with raspberries, chocolate and add candles just before serving.
