The biggest shortcut is to use a pressure cooker. After searing, cook the meat under pressure for about 30–35 minutes, then thicken the sauce as in the recipe. If you’re cooking in a regular pot, slice the meat thinner and pound it well to significantly shorten the braising time.

Serve the garlic beef with mashed potatoes or bread dumplings instead of rice. For a stronger flavor, add 1 teaspoon of whole-grain mustard to the onion and briefly sauté. For a smoother sauce, briefly blend the finished juices with an immersion blender before returning the meat.
