The biggest shortcut is to roast the eggplants halved, cut-side down. You don’t need to turn them or watch them over a flame and the flesh softens quickly. For a smokier flavor, you can season the finished dip with a pinch of smoked paprika or briefly char the eggplant skin over a gas flame before roasting.
