The biggest shortcut is to use older rolls and simply coarsely grate the apples with the peel on if it’s nice. Don’t soak the rolls long—just quickly turn them in the milk mixture. The pudding will stay less soggy and hold together better.

Variants and alternatives
Instead of rolls, use leftover braided sweet bread (vánočka) or mazanec and reduce the sugar by about 20 g. Add a little lemon zest or a tablespoon of sour cream to the quark for a creamier filling. You can omit the raisins or replace them with chopped walnuts. For a sweeter dessert, brush the top layer after baking with a tablespoon of melted butter mixed with a pinch of cinnamon.
