The biggest flavor difference comes from how you brown the mushrooms. Don’t rush – let them release their water, let that water almost evaporate, and only then let them develop color. It’s the golden mushrooms that give the sauce a “meaty” taste and depth.

Variants and alternatives
Without cream: omit the cream and finish the sauce with a tablespoon of butter. It will be lighter and more “juicy.” With mustard: add a teaspoon of whole-grain mustard – the sauce will be tangier and more “pub-style.” With pepper: add red bell pepper strips along with the mushrooms. The dish will be more colorful and a bit sweeter. For the lunchbox: the dish is ideal for the next day. Store the meat with the sauce separately from the side – when reheating the sauce will stay creamy and not turn into a “mash.”
