1Step 1Rinse the raisins with hot water, pat dry and optionally soak them in rum for 10 minutes. Preheat the oven to 170 °C and line a baking sheet with parchment paper.
2Step 2In a large bowl, mix the flour, baking powder, granulated sugar, vanilla sugar and salt. Add the quark, 2 eggs, softened butter, lemon zest and half of the milk.
3Step 3Work into a soft, just slightly sticky dough. If it’s too dry, add the remaining milk spoon by spoon. Finally fold in the raisins and, if used, the rum they were soaked in.
4Step 4Transfer the dough to a lightly floured work surface and knead briefly. Shape into a round loaf, place it on the baking sheet and smooth the surface with your hands.
5Step 5Brush the mazanec with beaten egg and sprinkle with almonds. With a sharp knife, make a shallow cross on top so it opens evenly while baking.
6Step 6Bake for 45 to 55 minutes until golden. If the surface browns quickly, loosely cover it with foil. Check doneness with a skewer — it should come out dry.
7Step 7Let the finished quark mazanec cool on a wire rack. Slice only after it has cooled so the crumb doesn’t collapse.

Kitchen tip

The biggest shortcut is to weigh the dry ingredients and soak the raisins in advance. Then you only need to quickly combine the dough, shape the loaf and bake without waiting for rising. For a finer crumb, use full-fat quark and let the butter soften completely.
