The biggest shortcut is to use canned chickpeas and cut the sweet potatoes into smaller even cubes. Always keep the dip separate because cottage cheese curdles when reheated and fresh greens would wilt unnecessarily. For a bolder flavor, drizzle the roasted mix with a little lemon juice after it comes out of the oven.

Instead of quark, use thick Greek yogurt; the dip will be creamier and lighter. For heartier boxes, add 100 g of cooked rice, bulgur, or quinoa to each portion. You can substitute carrots or pumpkin for the sweet potatoes—just cut them into similarly sized pieces. For a spicier version, add 1/4 teaspoon chili or a pinch of cayenne pepper to the seasoning.
