The biggest shortcut is to arrange the cups on a small baking sheet and portion the chocolate with a teaspoon or a disposable bag with the corner snipped off. You can make the filling the day before and keep it in the fridge; just let it soften for a few minutes before filling. If it’s too dry, add a teaspoon of rum or milk; if it’s too runny, stir in a little more ground nuts.

Variants and alternatives
Instead of walnuts, use hazelnuts or a nut mix. For a milder taste, use half dark and half milk chocolate. Add a pinch of cinnamon or a little finely grated orange zest to the filling. For a non-alcoholic version, replace the rum with milk, coffee or orange juice.
