Homemade chicken nuggets that look like fast food but you make in the airfryer with minimal oil and in minutes? That's exactly this recipe. Chicken breasts cut into small pieces, marinated in a simple yogurt-garlic marinade, coated in a mixture of breadcrumbs and cheese that makes them nicely crispy outside and juicy inside. With a quick cheese dip from yogurt and grated cheese you can mix in moments while the airfryer does the work. Ideal quick dinner, party snack or packed lunch — no rocket science, minimal dirty dishes, maximum flavor.

1Step 1Trim chicken breasts of membranes and any fat and cut into smaller pieces – about the size between a small bite and a classic nugget so they’re easy to eat by hand. Try to keep them similar in size so they bake evenly.
2Step 2In a large bowl put the yogurt, mustard, pressed garlic, paprika, dried garlic/onion, salt and pepper. Stir into a smooth marinade. Add the chicken pieces, coat them well in the marinade (hands are fine), cover the bowl and let the meat rest at least 10–15 minutes. If you have more time, refrigerate for up to an hour – the nuggets will be even juicier.
3Step 3Meanwhile, prepare the coating. In a smaller bowl, mix the breadcrumbs, crushed cornflakes (roughly crushed so some pieces remain) and grated cheese. The mixture should be dry but slightly “fluffy” – the cornflakes ensure the coating will be nicely crispy after baking.
4Step 4Preheat the airfryer to 190–200 °C (if your model allows). You can lightly spray the basket with oil or wipe it with an oiled paper towel so the nuggets don’t stick.
5Step 5Remove each piece of chicken from the marinade, shake off the excess and coat in the breadcrumb, cornflake and cheese mixture. Press the coating on gently so it adheres. Place the nuggets in the airfryer basket in a single layer – don’t stack them so they roast instead of steam.
6Step 6Lightly drizzle the nuggets with oil or spray them with oil. Insert the basket into the airfryer and cook for 10–12 minutes, shaking the basket or flipping the nuggets halfway through. Time depends on the appliance’s power and piece size – done nuggets should be golden, firm to the touch and fully cooked inside (no pink center).
7Step 7While the nuggets cook, prepare the cheese dip. In a bowl, mix the yogurt, sour cream (or thicker yogurt), grated cheese, crushed garlic, lemon juice, salt and pepper. Stir until smooth, then fold in chopped chives or spring onion. The dip can be fairly thick so it clings to the nuggets. Taste and adjust with salt or lemon if needed.
8Step 8Let the finished nuggets rest for 2–3 minutes – the crispy coating will settle and be less fragile. Then transfer them to a plate, add a bowl of cheese dip and optionally some vegetables or toasted bread. Ideal for movie snacking, a quick dinner or an upgraded fast-food snack after training.

Kitchen tip

Want your nuggets to stay crispy in the box? Let them cool completely first on a rack or plate uncovered, then put them in the box. If you close them while still hot, steam will make the coating soggy and you'll lose the crispness. Before eating, you can pop them back in the air fryer for 3–4 minutes and they’ll be almost freshly cooked.
