1Step 1Pat the carp dry with paper towels, season with some salt, pepper, and drizzle with lemon juice. Let rest for 10 minutes. If the skin is thicker, score it in several places.
2Step 2Wash the potatoes, peel if desired, and slice into 4–5 mm thick rounds. Soak them in cold water for 10 minutes, then drain and dry thoroughly in a towel.
3Step 3Toss the potato slices with half the oil, the remaining salt, 1 teaspoon paprika, thyme or caraway, part of the dried garlic, and pepper. Spread them in the first air fryer basket in as loose a layer as possible.
4Step 4Prepare three shallow plates. Put the flour on the first, beat the eggs in the second, and place the breadcrumbs mixed with the remaining paprika and dried garlic on the third. Coat the carp in flour, then egg, then breadcrumbs.
5Step 5Lightly brush the breaded carp portions on both sides with the remaining oil or spray with oil. Place them in the second basket so they do not overlap.
6Step 6Set the potatoes to 190 °C for 24–28 minutes. Set the carp to 180 °C for 14–18 minutes depending on portion thickness. If the fryer has a finish-sync function, turn it on.
7Step 7Halfway through cooking, shake or stir the potatoes. After 8–10 minutes, carefully turn the carp and brush with a little more oil if needed so the coating browns evenly.
8Step 8The carp is done when the coating is golden and the flesh flakes easily from the bone; thicker portions should reach an internal temperature of at least 63 °C. Let rest for 2 minutes and serve with the potatoes and lemon.
9Step 9Let the cooked carp rest for 2 minutes. Serve with potato slices, lemon wedges, and optionally potato salad or tartar sauce.

Kitchen tip

A two-basket fryer is most helpful if you pre-slice the potatoes and prepare the coating plates. Always dry the potatoes well after soaking, otherwise they will steam rather than roast. If your baskets are smaller, cook the carp in two batches or use smaller portions.

Variants and alternatives

Use crushed caraway instead of thyme, which is a more traditional match for carp and potatoes. For a lighter crust, mix the breadcrumbs with 1 tablespoon cornmeal or panko breadcrumbs.
