The biggest shortcut is to cook the meat a day ahead. Once cooled, the fat solidifies easily on the sauce and the next day you only need to gently reheat the beef cheeks while you make fresh mash.

Variants and alternatives
You can replace part of the stock with 150 ml strong coffee for a darker, bolder sauce. If you don't want to puree the sauce, finely chop the onion and simply simmer the finished sauce to the desired thickness. You can substitute some of the potatoes in the mash with celeriac or parsley root for a lighter, more flavorful side.
