Apple cake is exactly the kind of dessert that “smells like home.” No complicated patisserie – one simple batter, a pile of grated apples, cinnamon and a bit of sugar. Everything goes on a baking sheet, pop it in the oven and in half an hour you have a juicy cake that disappears before it’s fully cooled. Great with afternoon coffee, for a weekend visit, or even as a sweet breakfast the next day. If you have apples at home that don’t look very presentable anymore, this recipe is an ideal way to use them up – easy, quick and without any unnecessary fuss.

1Step 1Preheat the oven to 180 °C (top/bottom heat). Line a baking sheet with parchment paper, or grease it and dust with coarse flour. This will save you stress when removing the first piece – it won’t tear or stick to the bottom.
2Step 2Peel the apples, remove the cores and coarsely grate them. Put them in a bowl, add lemon juice to prevent browning, sprinkle in the cinnamon and sugar to taste (if your apples are sweet, use only a little). Mix everything and let it sit for a while while you prepare the batter – the apples will release some juice and make the kitchen smell wonderful.
3Step 3Sift the flour, baking powder, vanilla sugar and a pinch of salt into a large bowl. Stir the dry ingredients so the baking powder is evenly distributed and the cake rises evenly, not just in one spot.
4Step 4In another bowl (or directly into the dry mix) whisk the eggs with the sugar – a whisk or hand mixer is fine – until the mixture is lighter and slightly fluffy. Add the oil and milk and whisk briefly again to combine.
5Step 5Pour the wet mixture into the dry ingredients and stir with a spatula or whisk until you have a smooth batter without large lumps. You don’t need to overmix, just work the flour in so the batter is on the thinner side – pourable, so it’s easy to spread on the baking sheet.
6Step 6Pour the batter onto the prepared baking sheet and spread it evenly to the edges. Arrange the grated apples on top – you can squeeze them lightly if they released a lot of juice, but it’s not necessary. Try to make an even layer so every piece of cake gets a nice portion of apples.
7Step 7If you like, sprinkle almond flakes on top – the cake will be crunchier after baking and look a bit more “festive.” Put the sheet in a preheated oven and bake about 30–35 minutes, until the edges are golden and the center of the cake feels springy. If you’re unsure, poke the center with a skewer – if it comes out clean, it’s done.
8Step 8Let the baked apple cake cool on the baking tray for a few minutes. Then you can transfer it with the paper onto a cutting board and let it finish setting. Before serving, lightly dust with powdered sugar. Cut into squares or rectangles and serve plain, with whipped cream, or with a scoop of vanilla ice cream if you really want to treat yourself.

Kitchen tip

If you have apples at home that aren’t exactly photogenic, this cake is their ideal second life. Feel free to mix different varieties – sweeter and tarter apples together make a better flavor than one “perfect” variety. The cake is great the next day too, just don’t leave it unprotected – cover it with a cloth or store it in a container so it doesn’t dry out.
