The biggest shortcut is to grate the cheese and chop the chives in advance. You can make the cheese mixture several hours ahead and keep it in the fridge, then just quickly shape and coat the balls right before serving. If you’re in a hurry, use damp hands and shorten chilling to a few minutes.

For a stronger flavor, replace part of the hard cheese with cheddar or a bit of blue cheese. Instead of nuts, use sesame, finely chopped pumpkin seeds, or just chives. For a milder version, use only half a clove of garlic and add a teaspoon of plain yogurt. For a more festive platter, serve the balls on cucumber rounds, with cherry tomatoes or pieces of bell pepper.
