The biggest time-saver is to chop the onion, garlic and peppers in advance and store them separately in the fridge. In the evening you can start by frying the meat and finish cooking the bulgur right in the pan.

Variants and alternatives
For a milder kid-friendly version omit the pepper and replace part of the peppers with corn. For a bolder flavor add 1/2 teaspoon smoked paprika to the meat. Instead of parsley, serve portions with a spoonful of plain yogurt. Leftovers are good for the next day’s lunchbox; when reheating add a tablespoon of water so the bulgur isn’t dry.
