Preparation Steps for Spaghetti Carbonara
- 1 Prepare the pasta: Bring a large pot of salted water to a boil and cook the spaghetti according to the package instructions until al dente. Before draining, reserve about 1 cup of the starchy pasta water.
- 2 Cook the pancetta: Meanwhile, cut the pancetta into small cubes. Heat olive oil in a pan and fry the pancetta until crispy. Add a crushed garlic clove and sauté briefly until fragrant, then remove the garlic.
- 3 Prepare the sauce: In a bowl, whisk the egg yolks with grated Parmesan and Pecorino Romano, if using. Add a pinch of freshly ground black pepper.
- 4 Combine the spaghetti with the sauce: Add the drained spaghetti to the pan with the pancetta. Remove the pan from heat and mix in the egg and cheese mixture. Stir quickly to prevent the eggs from scrambling, creating a creamy sauce. Add a bit of the reserved pasta water if the mixture is too thick.
