Preparation method for sour lentils
- 1 Prepare the lentils: Rinse the lentils thoroughly under running water, then cook them in a large amount of water. Add the bay leaf and allspice. Simmer over low heat until the lentils are soft but not overcooked, which takes about 20-30 minutes. Then drain the lentils and remove the bay leaf and allspice.
- 2 Prepare the base: Heat oil in a pot and add finely chopped onion. Sauté the onion until golden brown. Then add grated carrot and briefly sauté together with the onion.
- 3 Thicken with flour: Add flour to the sautéed onion and carrot, stirring until a light roux forms. Gradually add water or vegetable broth while stirring to prevent lumps. Bring the mixture to a boil and let it simmer gently for about 10 minutes until the liquid reduces slightly and thickens.
- 4 Add the lentils: Stir the cooked lentils into the thickened base. Then add vinegar, sugar, salt, and pepper to taste. Adjust the amount of vinegar according to your preferred level of acidity.
- 5 Serve: Serve the sour lentils warm, ideally with a boiled egg or grilled sausage and bread. It can also be served as a standalone dish or as a side to smoked meat.
