Preparation of Leek Cream
- 1 Prepare the vegetables: Slice the leek into thin rings, peel and cube the potatoes, and chop the onion and garlic finely.
- 2 Sauté the onion and garlic: Heat the butter in a pot over medium heat and add the onion and garlic. Sauté until they become translucent and soft, about 5 minutes.
- 3 Add the leek and potatoes: Add the chopped leek and potatoes to the pot and sauté briefly, about 5 minutes.
- 4 Add the broth: Pour in the vegetable broth and bring it to a boil. Then reduce the heat and let it simmer until the potatoes are soft, about 20-25 minutes.
- 5 Blend the soup: Use an immersion blender to blend the soup until smooth. If the soup is too thick, add a little water or broth.
- 6 Add the cream: Stir in the whipping cream and mix well. Let the soup warm on low heat for a bit.
- 7 Season: Season the soup with salt and pepper to taste.
- 8 Serve: Serve the soup hot, garnished with a drizzle of olive oil or a pat of butter, as preferred.
